Mexican Rice


I love Mexican rice. I have tried a few different recipes, but this has turned out to be the most delicious and by far the easiest. I found it one Sunday afternoon when we were trying to figure out what to make for dinner. We didn't have much on hand and we didn't want to go to the store. I was excited when I found this recipe because we already had everything. It comes from Allrecipes, and we have adapted it just a tiny bit.

Ingredients:
3 T Vegetable Oil
1 C Uncooked long grain rice
1 t Garlic Salt or Powder
1 t Chili Powder
1/4 C Chopped Onion
1/2 C Tomato Sauce
2 C Chicken Broth

Heat oil in a saucepan over medium heat and add rice. Cook, stirring frequently until the rice is golden brown. While the rice is cooking sprinkle the seasonings on top.

Stir the onions in and cook until they are tender. Stir in the tomato sauce and chicken broth, and bring it to a boil. Reduce heat to low, cover and simmer for 20-25 minutes. Once most of the liquid has been absorbed and the rice is fluffy, give it a little stir to mix in any tomato sauce that has collected around the edges.

Now you have the perfect addition to any Mexican dish.
